Lemon-Ricotta Pancakes with Caramelized Apples


I found this recipe in the "Dash" newspaper insert and decided to give it a try.  I made these pancakes for my husband and son one weekend .. this is a keeper!  I know the other 3 kids will love it as much as we did.  They cook up so light and fluffy, yet they are filled with protein and the lemon zest really added to them.  
I'm thinking a blueberry compote would go well with these, also.

Pimento Cheese

This is one of my favorite foods ever!  I love it on crackers, on a toasted sandwich with sliced tomato, on scrambled eggs, on chili, on baked potatoes .... I could eat this every day!

My son's meal

This dinner  menu was chosen by my 13 year old, who found the recipes and cooked it all himself -- I was his assistant.  The baked beans were such a hit, I made them again this weekend for my husband's work party and they were a big hit!
