Icebox Cake

I made this cool and refreshing cake for us back in August, and just came across the picture on my phone. :-)  I'm thinking about variations:  using vanilla wafers, graham crackers, adding nuts, fruit, or jam between the cookie layers...so many choices!  Step by step directions with photos can be found at the source link.

Ingredients
  • 3 cups heavy cream
  • 1 pkg. Nabisco Famous Chocolate Wafer Cookies
  • 1 tsp. vanilla
  • 1 Tbsp. unsweetened cocoa
  • 2 Tbsp. sugar
  • Good candy bar, such as Lindt 60% Cocoa, for garnishing

Directions
  1. Whip cream to medium peaks using a whisk or hand mixer. Add vanilla, sugar, and cocoa powder and combine well.
  2. Take a cookie, spread a spoonful of whipped cream on top of it, and top it with another cookie. Repeat until you have a little tower. When the tower gets too high, lay it on its side.
  3. Build another tower of cookies, lay it on its side, and connect your two cookie-logs. (Push them close together.) Repeat until the sleeve of wafers is finished, reserving some of your whipped cream. Either make one long log, or position two logs side by side like I did in the picture above, since my platter is round.
  4. Frost the log(s) with your remaining whipped cream.
  5. Cover your cake with foil, and let it rest in the fridge overnight. Before serving, garnish it with chocolate shavings and/or sprinkles. Slice it on the bias for the best look.
