Grandpa's Potatoes

This is a favorite side dish for our family.  It's a simple foil packet of potatoes and seasonings that we toss on the grill.  Bill's grandfather used to make this for their family way back when he was little and Grandpa would place these on a charcoal grill for a really long time.  These days, we've modernized the recipe and it's still just as good.  We prebake the potatoes in the microwave, then dice and season them before adding them to our gas grill.  What a timesaver!

Grandpa's Potatoes

Prep time:  15 min.  Cook time:  10 min.

Ingredients
one russet potato per person
1 stick butter
garlic powder to taste
onion powder to taste
parsley to taste
paprika to taste
red pepper flakes (optional)
salt to taste
pepper to taste

Directions:
1.  Wash and prick the potatoes and microwave until they are soft, about 10-15 minutes.
2.  Dice the potatoes into bite sized pieces.
3.  On a foil square about 12" x 12", add the potatoes and a couple of pats of butter.  Sprinkle on the rest of the seasonings to taste.

 4.  Fold the foil up and around the potatoes to make little packets.

Ready for the grill! 
5.  Add to a preheated grill and turn over after a few minutes to make sure the butter and seasonings are well distributed.

6.  When serving, you can place a packet on each plate -- you can eat directly from the packet or pour it out on your plate.  Don't forget all the yummy butter!

Note:  Occasionally when we start to make these, it will begin raining -- no big deal, just pop these in a 350 F oven for around 15 minutes.
