Texas has so many good food choices, it was hard to narrow down just one main course but after a long debate, we've ended up with:
Menu: Chili con Carne, Tortilla Chips and Salsa, and Texas Sheet Cake
Outcome: The chili was good, the tortilla chips and salsa were good, but WOW this cake was just super delicious. So much better than a box cake and quite easy. Next time I make it I will half the recipe but I'm 100% making it again. VERY good flavor and texture!

Chili con Carne
Texas
designated chili as the official state dish in 1977.
Prep

Ingredients
·
2 lbs. ground
beef
·
1 onion, chopped
·
1 bell pepper,
chopped
·
1 (14 oz.) can
diced tomatoes
·
1 (14 oz.) can
crushed tomatoes
·
2 cans kidney
beans
·
2 Tbsp. chili
powder
·
2 Tbsp. minced
garlic
·
1 tsp. cumin
Directions
1. In a pot, brown the ground meat, onion, and bell
pepper with a little salt and pepper.
Drain any fat.
2. Add the remaining ingredients (beans and tomatoes with
their juices) and mix well.
3. Cook over medium-low heat for at least 2 hours,
stirring occasionally. This always
tastes better the next day, so consider making it a day ahead of time and just
warming it before serving. Add shredded
cheese to the top.

Salsa
Prep

Ingredients
·
1 can (14 oz.)
whole tomatoes with juice
·
1 can (10 oz.)
Rotel (diced tomatoes with green chiles)
·
¼ cup chopped
onion
·
1 clove garlic,
minced
·
1 small jalapeno,
seeded, chopped
·
¼ tsp. sugar
·
½ tsp. cumin
·
¼ cup cilantro
·
½ of a lime’s
juice
Directions
1.
Combine whole
tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and
cilantro in a blender or food processor.
2.
Pulse until you
get the salsa to the consistency you'd like. Test seasonings with a tortilla
chip and adjust as needed.
3.
Refrigerate salsa
for at least an hour. Serve with tortilla chips.
Texas Sheet Cake
The sheet cake is a very close cousin of the German
chocolate cake, but requires much fewer steps, much less cleanup and can be
completed in an hour. That makes it ideal for parties, for cook outs, for a
quick and easy dessert to take to the Sunday after-church meal.
Prep time: 10
min. Cook time: 20 min.
Ingredients:
•
2 cups all-purpose flour
•
2 cups white sugar
•
1 tsp. baking soda
•
½ cup sour cream
•
2 eggs
•
1 cup butter
•
1 cup water
•
5 Tbsp. unsweetened cocoa powder
•
Frosting:
•
6 Tbsp. milk
•
5 Tbsp. unsweetened cocoa powder
•
½ cup butter
•
4 cups confectioners' sugar
•
1 tsp. vanilla extract
•
1 cup chopped pecans
Directions:
1.
Preheat oven to 350 ยบ F. Grease and flour a
10x15 inch pan.
2.
Combine the flour, sugar, baking soda and salt.
Beat in the sour cream and eggs. Set aside. Melt the butter on low in a
saucepan; add the water and 5 Tbsp. cocoa. Bring mixture to a boil then remove
from heat. Allow to cool slightly then stir cocoa mixture into the egg mixture,
mixing until blended.
3.
Pour batter into prepared pan. Bake in the
preheated oven for 20 minutes, or until a toothpick inserted into the center
comes out clean.
4.
For the icing:
a.
In a large saucepan, combine the milk, 5 Tbsp.
cocoa and ½ cup butter. Bring to a boil then remove from heat.
b.
Stir in the confectioners' sugar and vanilla,
and then fold in the nuts, mixing until blended. Spread frosting over warm
cake.
